Crisp Corn Salad with Basil

I adore a fresh ear of sweet corn when it's just picked and so very sweet. Nothing more is needed other than a dash of salt + pepper. There's still plenty of time to enjoy this light summer dish before summer has passed.

This recipe came through one of our daughters via Ina Garten. It's so simple to create, you'll be quite impressed by the punch of flavors that come through.

Crisp Corn Salad with Basil
A flavorful side dish that's fresh + light
  • 4-5 Ears of Sweet Corn
  • 1/2 C Fresh Basil
  • 1/2 C Red Onion
  • 3 T Apple Cider Vinegar
  • 3 T Olive Oil
  • 1/2 tsp Salt + Pepper
Boil corn for 3 minutes til just tender. Remove and rinse under cold water to stop the cooking process. Mix together vinegar, oil, salt + pepper in a large bowl. Cut the kernels off the cob and toss with remaining ingredients. Just before serving cut basil into thin strips + toss. Serve warm.
