Greek Style Feta + Zucchini Salad

Zucchini is a favorite of mine, and it's in full production at this very moment. As we all know, this means there will be a multitude of the prolific vegetable from now until fall. So, as you're being inundated with this garden delight, I thought you might enjoy a new, very tasty and  very easy way to prepare it.

feta + zucchini salad

While looking for a seasonal dish to serve with steak, I came across this recipe in a 2007 Vegetarian Times. And what I love about this dish, besides is bright flavor, is just how pretty is serves up.

Ingredients:

Juice of one large lemon (approx. 3T)
Zest of one large lemon (approx. 1 tsp)
1 Clove garlic, minced
1/3 C Olive Oil
2 Medium zucchini, peeled into ribbons (approx. 4 C)
1 Medium sweet onion, sliced paper thin (approx. 1C)
1/2 C Crumbled feta cheese
2 Green onions (approx. 1/4 C)
1T Fresh mint, chopped
1T Fresh parsley, chopped

Slice your zucchini into two halves. Using a potato peeler (or, if you're brave, a mandolin), peel zucchini into thin ribbons. Add this to your sliced onions in a large bowl.

Whisk together lemon juice, lemon zest, and garlic. Slowly whisk in olive oil. Season with s+p. Toss zucchini mixture with dressing, cover, and let marinate two hours (or up to two days). Sprinkle with feta, mint, + parsley just before serving.

This dish couldn't be any easier to prepare. The fresh mint + lemon pack a punch of flavor that's cool + refreshing while the feta adds a creaminess that balances the citrus.

It's a culinary explosion of refreshing flavor that's the perfect side dish for your next bbq. This one is definitely a keeper in my arsenal of seasonal recipes.

Here are two more zucchini recipes to help add some variety in your summer bounty: Zucchini Bread, Zucchini Parmesean Bake. Enjoy!

  1. This looks really yum. It's the second type of recipe that I've seen like this in a few days, so now I want veggie-noodles. ;) I might need to try this with a peeler!

  4. This looks awesome. I will have to change it a bit because I hate mint and a whole cup of raw onion seems like a LOT to me. Does the lemon dressing alter the onion a bit?
