As a beginner, I haven't traversed too far into the world of kefir. I've seen recipes for kefir cheese and various sweet breads, but I've chosen to stick with the super healthy smoothie version for now. And because kefir has the perfect consistency for a smoothie, you don't have to add additional juices that are high in calories to make it great. I love that it keeps this smoothie low-calorie as well.
After a couple of trials using different fruits, the Blueberry-Citrus smoothie has become my favorite. This blend compliments the flavor of the kefir giving a perfect balance of sweet and tart.
1 C Kefir milk
1 C Blueberries
1 Serving mandarin oranges (from a four-pack snack size)
1/4 C Honey (I prefer mine sweet)
Toss your kefir milk and fruits into a blender.
Then add honey. Many recipes call for 1-2 T of honey opposed to my 1/4 cup, so judge accordingly. As you can see, I like mine on the sweeter side to balance the tartness of the other ingredients.
Last, blend for 1-2 minutes.
If you have time, place it in the freezer for 30 minutes or so. Otherwise, enjoy as is.
Super easy, super healthy, super-food. Also high in protein, a kefir smoothie will keep you going all through the morning.
