In the Garden Today - Zucchini Bread Recipe


In the garden today is our first harvest of summer vege's.  Little cucumbers, yellow squash, & my favorite summer vege - the zucchini. We like to pick them while they're still young & tender.


My girls love zucchini bread. And although they are grown and fully capable of making their own, I still get requests for zucchini bread from them. I don't mind.

After trying many recipes, I've found one that's the perfect balance of sweetness & moistness.

 I hope you'll give it a try.

Zucchini Bread

3 C plain flour
2 C sugar
1/2 tsp salt
1 tsp baking soda
3 tsp cinnamon
3 tsp vanilla
2 eggs, well beaten
2 sticks butter, melted
2 C zucchini, unpeeled & grated
1/2 C chopped nuts

Grease & flour 2 loaf pans.
Sift together flour & soda.  Add sugar, cinnamon, & salt.  Blend well.  
Mix together the eggs, butter, zucchini, & nuts.  Add to dry ingredients & mix well.
Fill loaf pans & bake approximately 1 hour @ 325.
You can also use muffin tins - just reduce cooking time to 30 minutes {makes two dozen muffins}.
Let cool before removing.

The best way to eat it is warmed with a little butter {okay, okay.  I live in the South, & ya'll know everything's better with a bit of butter}.

    1. when your years past the thong, then adding a little extra butter doesn't seem to "hurt" quite as much! {love your blog btw. & plan to revisit when i have a little more time to spend.}

  4. Growing up, zucchini bread was the only way I'd eat the zucchini from my parents garden. Lol. I might have to make some again. :-) I'm over from BYW.
